And I Fell Back… – Healing Journey Day 48

This morning, I woke up extremely tired but excited again. I had so much good knowledge in my brain from the convention the day before, and I couldn’t wait to tell everyone about it!

I didn’t get a chance to make a smoothie first thing in the morning, but I did make a smoothie at lunch time that was simply bananas and Barlean’s strawberry-kiwi green powder. This greens powder is DELICIOUS! I highly recommend getting that brand and flavour if you’re looking for a good greens powder. I went through that smoothie fairly quickly.

School went so well! The programs I wanted to start implementing were taken on by my students and they ran with them! I was so impressed! I’ve made a pact to not yell in the classroom, and I had several students come up and tell me they didn’t want to yell anymore either. I had a student use a tool in PE class when I haven’t even a poster to show for anything in my classroom. I was being impressed left and right and am getting others in the school motivated to make changes too. I’m taking on the personal challenge of changing the way our school teaches and disciplines. Pray for me and/or wish me luck!

After school, I had a meeting for an evaluation that our school is getting done, so I didn’t get to make another smoothie until after 5:00 pm. When I finally was able to make a smoothie, I made it out of bananas, peaches, celery, and romaine lettuce. This was interesting… I don’t think celery and banana are my favourite mix. But I drank it anyway.

Now, after this smoothie was our monthly ladies’ craft night at school. I had not brought enough fruit with me because I’m still having an issue with bananas not ripening. And of course, this set me up for a bad-eating night. Mind you, my housemate who got me into crafting in the first place, made a vegetable and pasta dish with no dairy whatsoever just so I could have some. So I ended up eating some of that along with some chips and hummus and salsa. Ugh… I actually think it would have been better if I had just skipped the chips alone. But I could tell the next day was not going to be good…

After our craft night, I went to bed. We almost always stay late, talking to each other and hopefully getting some type of crafting done. Some people bring work and just enjoy the social aspect. It’s honestly a great time, but next time, I gotta fix the food situation. It can be conquered!

Review of Symptoms:
-Acne is improving!
-Stomach feels like a rock is sitting in it after cooked foods…
-Tired
-Happy and motivated.
-Hair is doing SO WELL!

Weight at the end of the day = 173.2 (up 2 lbs from yesterday… I thought it was going to be worse than this)

Total Calories = 2295 (79% carbs, 14% fat, 7% protein… honestly not bad!)

Quick, Healthy, Vegan Meal

Excuse the tear in the oven mitt. I’ve had these oven mitts for years and absolutely love them! Don’t replace something that still works!

So this is a post, different than anything I’ve ever done before. I don’t consider myself a cook or a chef by any means. I normally feel like I just “throw” stuff together or follow/modify recipes sometimes. Unfortunately, I’m much too busy (I know I need to fix this) and faster food just becomes efficient for my time. So here’s a healthy recipe for those in the same boat as I am.

Quick Pasta Ingredients:

2 cups (measure dry) of Eden’s Organic Vegetable Spiral Noodles
3/4 cup of Kirkland Organic Marinara Sauce
1 tsp. of Nutritional Yeast

Boil pasta according to box. Add the sauce and heat up in the same pot. Pour in a bowl and sprinkle with nutritional yeast.

Super yummy, healthy and organic!

Now, as always, I sit back and look at my food and wonder what could be better or what I could have done differently. So here are some swaps below.

Swaps:

1. Create your own marinara sauce if you have the time. This sauce has higher fat than I would prefer, and homemade sauces mean that you are in control of the ingredients!

2. Add some peas, corn, broccoli, etc. The vegetables will add extra nutrients!

My New Experiment: Fruit

I think it’s time for a little background:

I grew up a hunter’s daughter. My father grew up a lumberjack’s son. He learned quickly in life that there was not a ton of money, and so my grandmother grew a vegetable garden, and whatever my grandfather was able to hunt was the meat they served (rabbits, deer, moose, partridge, etc…).

Thus, I grew up a heavy meat eater. In fact, stews or beans with biscuits, and the typical “meat and potatoes” were quite frequently a supper meal. Of course with the younger generations and slightly more money, pizzas and junk foods made their way in the diet as well. But it would not be uncommon for me as a child to sit down and eat a pound of bacon myself. That’s just the way it was.

I remember when I met my first vegetarians. They were like celebrities to me because the only people I ever knew of that would even think of not eating meat were celebrities. Nobody in the “real world” would ever think to live without eating meat. It must surely be a way to die!

However, seeing these people live, and healthily, gave me a spark that continued to grow. One morning, in my teenage years, I simply woke up, and told my mother never to make meat for me again.

Did I exactly know what I was getting into? Absolutely not. In fact, eating some vegetarian junk food without learning the proper way to eat healthily vegetarian landed me with intensive stomach pains and a visit to the hospital where the doctor informed me of some key staples I should be eating to be healthy. Oops. Learned that lesson the hard way.

And so it began. A somewhat healthier 10-11 years of being a vegetarian. Cold turkey. No going back.

It wasn’t until I met my husband, and found out he had grown up vegetarian that I went back to eating meat. Sounds weird, I know. But he met my family at my university graduation weekend, and my stepfather is notoriously known for his bbqing skills. My brother convinced him to try a “real” burger, and he was hooked. Of course, eventually it got to me, and I began eating meat again.

Of course, since I had been studying the Bible more and learning about healthier ways of eating, I still did not eat pork or animals considered “unclean”. I stuck with the basics of chicken, turkey, beef, and some fish. I am an Atlantic girl, and fish (specifically Atlantic Salmon) has always been a favourite.

Now recently, I’ve been reading and studying more into health. I’ve been looking at vegan diets, raw vegan diets, the details of what is going on with the meat that is served to us these days, the packaging, the handling, the processing, all of these things that are completely vital for us to know truly what we are putting in our bodies. And I’ve come to a conclusion: I need to get rid of the meat and animal products.

I could go on forever and ever about the toxins, poisons, and everything that is being put into animal products. I could tell you all about the fact that the majority of the meat we buy in stores has already gone bad and we don’t even know it. I could go on and on about how safety inspections are unrealistic, and how really, at the end of it all, we can only do the best we can with what we’re given. A hot topic, especially for someone who works out is of course how you get in enough protein.

But I’ve decided, the only true way to convince people is not a lecture, but to simply be a living example. And that is what I’m going to do.

Now, my husband is not quite on board with me on this, and I have promised to never ask him to change. If my life leads a perfect example, I figure that should be proof in and of itself. But little by little, he seems to be a little more supportive, though maintaining zero interest in it for himself, which is totally fine.

My plan is to still workout, to still continue researching how to eat properly, and to still continue on with everything else the same, except for how I eat. One difference. I’m getting the junk out of my system!

Week 11 Day 1: Double Time!

The good news? My husband woke up feeling much better! The bad news? I didn’t sleep well. I tried sleeping on the couch downstairs so that I wasn’t face-to-face with whatever my husband had. But between this one housefly that would not leave my ear alone, and the dogs whining, I ended up dragging myself upstairs around 3 a.m. and getting “ok” sleep from then on. Sometimes it would be so much easier if dogs could just talk in a language we could understand. Ugh.

So today, I spent quite a bit of time doing laundry and house cleaning again. However, since I had missed the gym so much already, it was my goal to get to the gym twice today. Somehow, I succeeded.

My husband was in no shape to go to the gym today, especially since he was still recovering from yesterday. So he simply dropped me off at the gym after we ate some Booster Juice together. There is a Booster Juice in my gym, so it was all done in one stop.

My first workout was a legs workout. And oh man, did I raise the weight on almost everything. I pushed hard! And I was loving it. I remember a time when I used to DREAD leg workouts with every ounce of my being, and more and more, I’m noticing how much I actually enjoy them! It’s funny how things change!

After my leg workout, my husband came and picked me up. We went to a Japanese restaurant that was recommended by his journeyman. I was so excited, did not order sushi but instead had a bento box with vegetable tempura, rice, steamed sprouts and teriyaki chicken. I couldn’t finish it. It was so SALTY! I’m not sure if this is typical of Japanese food or not, but seriously, I left with a salty headache, craving sugar or anything that would cut that salty feeling.

After we ate, I had my husband dropped me off at the gym again. I felt fairly good after we ate, so I figured I might as well go and get it done.

The second workout was much harder. It was a chest workout and I could tell my energy was draining much faster. I also did a second round of 25 minutes of steady state cardio afterwards (first time was after my leg workout) and by the end, I knew I needed food, fast. My husband unfortunately forgot to bring the food I asked him to bring when he picked me up, so we made a pitstop on the way home and I loaded up on a huge chicken wrap (protein and minimal fat), a doughnut ( quick carb-loading!), and a nice iced coffee to add back some energy. This actually backfired on me because I think the caffeine kept me awake. I went from barely being able to stay awake to not being able to fall asleep. Oops.

It was a good day, and although two workouts was a lot for one day, I feel accomplished and my mind is happy. That’s a good way to end the day.
